Italian Sausage with Ravioli and Three Cheese Sauce

This is a one-pot meal that is simply delightful! Greg and I are meat eaters, hence the sausage, but you can substitute spinach, mushrooms, you name it! Make it your own :-)

Ingredients:

1 pkg (15 oz) cheese ravioli (or spinach if you want!)
3 red, yellow, and/or green peppers, seeded and sliced
3 tbs. olive oil
1 large sweet onion, peeled and chopped
2 tsp minced garlic
1 1/2 tsp dried Italian seasoning
2 cans (14.5 oz each) diced tomatoes with herbs
3 cups shredded Italian (three or five) cheese
2 links of Italian sausage

Preheat oven 400 degrees.
Cook ravioli as it says on package. Set it aside. Cook italian sausage. Set it aside. Over medium heat cook peppers in 1 tbs olive oil for 5 minutes. Set it aside. In same pot over medium heat, cook onions, garlic and Italian seasoning with remaining 2 tbs oil for about 5 minutes. Add tomatoes and increase to high heat. Bring to boil. Reduce heat to low and let simmer 20 minutes (stir occasionally). Stir in cooked peppers and Italian sausage. Season with salt and pepper.

Spoon 1 cup of tomato mixture into bottom of greased casserole dish. Evenly layer 1/2 ravioli, 1 1/4 cups tomato mixture and 1 cup shredded cheese. Top with remaining ravioli and tomato mixture. Sprinkle remaining cheese over casserole. Cover with aluminum foil and bake 20 minutes (or heated thoroughly). YUM your DONE.

This one is my favorite... for now!

Doritos Casserole

I have to say that this recipe was one of my favorites growing up. Doritos, or any unhealthy snack for that matter, were never in the household. My mom would tell us not to touch them, but how tempting it was! It was definitely worth the wait, this recipe is deliciously bad for you. :-)

Ingredients:

1/2 cup chopped onions
2 garlic cloves (or 1 tsp powder)
1 tbs oil
1 lb ground beef
12 oz can of stewed tomatoes
1 pkg taco seasoning mix
1 4oz can of diced green chili peppers
1 bag of cheese flavor Doritos
1/2 lb mozzarella cheese
1/2 cup shredded cheddar cheese
2 cups sour cream

Ready to cook? Here we go!

Preheat oven to 350 degrees.

Saute 1/2 cup chopped onions, both garlic cloves, and oil.
Add 1 lb ground beef to mixture to onions. Cook fully.

Drain fat (ew, please do.)

Add stewed tomatoes, taco seasoning and diced green chili peppers. Simmer for 10 minutes. (Note: Did anyone notice the "new" grammar technique I used of not adding a comma before the and when listing? Weird rule. I'm working on it.)

While simmering... grease 9x13 dish. Sprinkle some Doritos on bottom of pan. Put meat mixture on top. Then layer with (in this order) mozzarella cheese, sour cream, and the rest of Doritos. Bake until hot (15-20 minutes). Remove from oven, top with cheddar cheese and bake until perfectly melted. YUM your DONE!

P.S. If you're going to be serving this dish as leftovers- don't add any Doritos to the casserole... instead make a dip. The Doritos will be soggy if not eaten when fresh out of the oven.
